Pea Pods Zesty Salsa
Pea pods get shelled, the peas go into the curry, and the skins go straight into the bin. If you’ve ever wondered what to do with ugly vegetables and fruits, or the scraps of “good” ones, this is a direct answer: stir-fried pea pod skins, blitzed with coriander, chilli, and roasted peanuts into a coarse, tangy salsa. Ten minutes, one pan, one blender, and a genuinely good reason to stop composting something that still had a second life in it.
Why this recipe works
Pea pod skins are fibrous raw, which is why most recipes skip them, but a quick stir-fry softens that fibre. Blending the aromatics into a paste first, then adding the cooked pod skins, builds flavour in layers instead of one blended-together mush.
Ingredients
- 200 gms pea pod skins, washed and drained
- 2 tbsp olive oil
- 1½ inch ginger, coarsely chopped (≈ 15 g)
- 3–4 green chillies, coarsely chopped
- 1 tbsp cumin (≈ 6 g)
- 100 gm coriander
- 2 medium onions, diced
- 2 medium tomatoes, diced
- 2 tbsp lemon juice (≈ 30 ml)
- ¼ cup roasted peanuts, crushed (≈ 35 g)
- Salt, to taste
Serves 4 as a condiment.

Step-by-step method

Swaps & variations
This same method works on other trimmings that usually get discarded, broccoli stems or cauliflower cores, stir-fried first to soften. Swap peanuts for cashews or sunflower seeds. For a smoother chutney-like consistency, blend everything together. Add The Misfits Red Onion Relish on the side when serving with paratha.
Storage & make-ahead
Keeps refrigerated in an airtight container for 3–4 days. Doesn’t freeze well.
Nutrition note
Carries the fibre and nutrients that would otherwise have been composted, along with vitamin C from tomatoes and lemon juice.
The Misfit behind this recipe
This one isn’t built around a Misfits product, it’s built around the same instinct behind every jar we make: that “waste” is often a naming problem, not a fact about the ingredient. Pea pod skins are exactly the kind of overlooked scrap that inspired The Misfits, upcycling cosmetically imperfect produce from organic farmers around Jaipur.
