What Does "Clean Label" Mean? (And What It Doesn'T)

Clean label is not a regulated term in India. FSSAI does not define it. No certification authority certifies it. Any brand can print "clean" on its packaging without consequence.

What clean label means in practice to the people who use the term meaningfully is an ingredient list that contains only ingredients a consumer can recognise, pronounce, and understand. No INS numbers. No "permitted emulsifier." No "antioxidant (INS 320)." Just actual ingredients, named plainly.

The practical definition most commonly used: a clean label food contains no artificial colours, no artificial preservatives, no artificial flavours, and no ingredients whose names are replaced by code numbers. That is it. It says nothing about whether a product is organic, natural, healthy, nutritious, low-calorie, or good for you. A product can be clean label and still be full of refined sugar. Reading the full ingredient list remains essential.

How To Read An FSSAI Ingredient List: Step By Step

FSSAI regulations require that ingredients be listed in descending order of weight, the ingredient present in the largest quantity appears first, the smallest last. This one rule gives you most of what you need.

Step 1: Look at the first three ingredients. These are the majority of the product by weight. If refined sugar, palm oil, or refined flour is in the first three of a product marketed as "healthy," that is your primary signal.

Step 2: Count the total ingredients. More than 8–10 ingredients on a packaged food product is not a hard rule, but it is a useful heuristic. The longer the list, the more likely there are functional additives that are not named plainly.

Step 3: Find the INS numbers. Any number following "INS" in the ingredient list is an additive coded under the international numbering system. It is not inherently dangerous, but it is a code replacing a name. Find out what it is (table below).

Step 4: Look for these phrases. "Permitted preservative," "antioxidant," "emulsifier," "stabiliser," "flavouring substances," "nature-identical flavouring," "artificial colour," "acidity regulator", these are all category names that may not tell you what the specific additive is.

Step 5: Check what comes after "contains." A "Contains: milk, soy, gluten" notice is an allergen declaration and separate from the ingredient list proper. Read both.

Greenwashing On Food Labels: The Claims That Mean Nothing

Several marketing claims on Indian food packaging sound meaningful but have no regulatory definition or enforcement:

"Natural", not defined by FSSAI. Any brand can use it. Synthetic additives can appear in products labelled natural.
"Artisan" / "homemade" / "small-batch", purely marketing descriptors. No definition, no standard.
"No added preservatives", technically accurate even if the product contains natural high-acid preservatives (vinegar, citric acid) that perform the same function.
"Made with real [ingredient]". FSSAI allows this claim with trace quantities. "Made with real honey" may mean the product contains 2% honey alongside significant refined sugar.
"Protein-rich" / "High in fibre". FSSAI defines these thresholds (protein: ≥12% of caloric value; fibre: ≥6g per 100g) but front-of-pack display is inconsistent. Always check the Nutritional Information table rather than the claim.

Clean Label Checklist: 8 Things To Check Before You Buy

1. Are the first three ingredients real food? (Not sugar, palm oil, or refined flour)
2. Are there any INS numbers? (If yes, look them up before buying)
3. Is the ingredient list under 10 items?
4. Are all oils named? (Not "vegetable oil", which oil?)
5. Are sweeteners named? (Sugar, jaggery, dates, honey, not just "sweetener")

7. No "nature-identical flavouring" or "artificial flavouring"?
8. Does every ingredient on the list have a plain English (or Hindi) name?

If the answer to all 8 is yes: you are looking at a clean label product.

What is regulated: the ingredient list must be complete, in descending weight order, and must name all additives either by name or INS number. Reading the ingredient list is the only reliable way to assess a product's additive profile.
What does INS mean on a food label?
INS stands for International Numbering System, a standardised coding system for food additives managed by the Codex Alimentarius Commission. FSSAI allows additives to be listed by their INS number rather than their full chemical name. This is legal but not transparent. INS 211 is sodium benzoate; INS 320 is BHA. Look up any INS number before buying if you are uncertain.
How do I know if a food product has palm oil?
FSSAI requires that palm oil be named specifically if it is used. However, products sometimes list "vegetable oil" for blended oil products. "Vegetable oil" is a catch-all term, the most commonly used vegetable oils in Indian packaged food are palm oil, sunflower oil, and soybean oil. If a brand does not name its oil source, ask.
What does "no added preservatives" actually mean?
That the manufacturer has not added a preservative substance. However, natural high-acid ingredients such as vinegar, citric acid, and lemon juice also act as preservatives, and they are not covered by this claim. A product with "no added preservatives" may still use acidulants for shelf stability. The claim is technically accurate but contextually incomplete.
Is it possible for a clean label product to still be unhealthy?
Yes, absolutely. Clean label describes the additive profile, not the nutritional quality. A product can have a short, recognisable ingredient list and still be high in refined sugar, saturated fat, or sodium. Clean label is one dimension of a food product and it tells you about transparency, not health outcomes. Always check the Nutritional Information panel alongside the ingredient list.
