Ingredients:
- 2 cups leftover rice
- 2 eggs
- 2 tbsp soy sauce
- ½ cup peas
- ½ cup carrots, diced
- ¼ cup corn kernels
- ¼ cup green capsicum, diced
- Salt & pepper, as per taste
Method:
- Whisk together 2 eggs and 1 tbsp of soy sauce.
- In a pan, pour the egg mixture and scramble.
- Once eggs are slightly cooked, add in the leftover rice and mix.
- Add in peas, carrots, corn, and capsicum and mix well.
- Add 1 tbsp of soy sauce and season with salt & pepper.
- Serve and Enjoy!
