In this blog, we are sharing a delicious, eco-friendly recipe that supports sustainability! Whipped Feta with Roasted Tomatoes and The Misfits Pesto is a vibrant and flavourful dip for any occasion.
Using The Misfits Pesto, made from rescued ingredients, helps the food system be more sustainable by nature.
Ingredients:
- 350g cherry tomatoes
- 3 Tbsp olive oil
- A few sprigs of thyme
- 1 garlic bulb, halved
- Salt and pepper to season
- 250g feta cheese, crumbled
- 90g Greek yoghurt
- 230g cream cheese
- 2 Tbsp The Misfits Pesto (and extra to serve)
- Za’atar or Italian seasoning, fresh basil, and extra virgin olive oil to garnish
- Nacho chips
Method:
- Preheat the oven to 200°C.
- Add tomatoes, olive oil, thyme, and garlic to a roasting tray. Season well and roast for 30–35 minutes, until the tomatoes blister and start to burst. Set aside to cool.
- Combine feta, Greek yogurt, and cream cheese in a food processor. Pulse until smooth.
- Spread the dip on a plate, swirl with The Misfits Pesto, and add roasted tomatoes around the dip or in the centre.
- Garnish with za’atar, fresh basil, and a drizzle of extra virgin olive oil. Serve with your favourite chips or nachos!
