We have saved imperfect red onions due to size and surplus harvest from getting thrown away by working with 3 farms in Chaksu, Jaipur rather than having them go to waste.
We use these imperfect red onions to make the Red Onion Relish.

Ingredients

Red onion (73%), Balsamic vinegar (7%), White wine vinegar (7%), Rice bran oil (5%), Molasses, Raw sugar, Dry red chilli, Non-iodized sea salt, Ashwagandha, Garlic powder, Kashmiri red chilli powder, Mustard seeds .

Paired with

Parathas, pizza, flatbread with goat cheese, burger, sandwich or bar-be-que with any kind of meat or veggies, grilled cheese sandwich and so much more .
